瑶柱萝蔔糕

每年新年,萝蔔糕都必定是我家的抢手货。婚后首年已向奶奶请教了做法,希望尽得她的真传来迎合相公的口味。经过多年的改良,这份食谱已是我家四口子的至爱,不知道你们喜欢不?

白萝蔔 Turnip ❨3-3.5斤❩ 1.8-2.1kg
腊肠 Lap Chang 3条❨pcs❩
冬菇 Mushroom 4朵❨pcs❩
虾米 Dried Sea Shrimps 2汤匙❨tbsp❩
干瑶柱 Dried Scallop 4粒❨pcs❩
粘米粉 Rice Flour 半斤❨300g❩
鹰粟粉 Corn Starch 70克❨g❩
水 Water 250-300ml
调味料 Seasonings:
鸡汤粒 Chicken Cube 1粒❨cube❩
盐 Salt 2-3茶匙❨tsp❩
糖 Sugar 2-3茶匙❨tsp❩
胡椒粉 Pepper 适量 Some

步骤

1白萝蔔去皮洗净,一半切条,一半刨丝备用。 Peel off turnip skin, 1/2 cut into stripes and 1/2 shred.
2腊肠切粒,冬菇、虾米、干瑶柱浸软后切粒或拆丝,用少许油爆香备用。 Lap Chang, mushroom, dried sea shrimps, dried scallop cut into dice after soaking in water to be soften. Stir-fry them by using a little oil.
3先炒白萝蔔条至微软,再把萝蔔丝连汁放入锅煮至微滚,加入腊味、配料及调味料煮至大滚熄火。 Stir-fry turnip first, then put the turnip shred with juice into the wok & boil. Add all ingredients & seasonings & boil again.
4将水逐少加入粘米粉及鹰粟粉内, 顺一方向搅拌混合成浆。为确保无粉粒,可用手搓揉。 Adding water into rice flour and corn starch little by little, stir in one direction.
5把粉浆渐次倒进萝蔔料内,边倒边搅匀。 Slowly pour batter into turnip mix, stir well at the same time.
6倒入蒸盘中蒸45-50分钟即可。 Pour in mold. Steam for 45-50mins.
7刚蒸好的萝蔔糕比较软,我家孩子会急不及待用匙马上享用。 其实待凉后,切件煎香吃味道更佳! Turnip cake is quite soft when just leaving the steam oven/wok. Cut into pieces while it is cooled, pan-fry to serve is better.
